Cucumber Salsa

When you live in a small town it is very important to lock your call this time of year.  If you don't, you will end up with a seat full of squash, zucchini, cucumbers, tomatoes, peppers, and any other produce the locals have an abundance of from their gardens.  So I repeat LOCK your cars.....unless you love all the goodies like I do then you may want to put a sign on your window that says....WILL TAKE FRESH GARDEN VEGGIES.

Here is a delicious recipe to make with fresh garden veggies.


Cucumber Salsa

3 cucumbers, peeled, seeded and chopped
4 Roma tomatoes, seeded and chopped
1 small onion, chopped
1/2 green pepper, seeded and chopped
1 jalapeno, seeded and minced
1 clove garlic, minced
1 tsp fresh parsley, minced (or 1/2 tsp dried)
2 tsp fresh cilantro, minced (or 1tsp dried)
2 tbsp fresh lime juice
1/2 tsp dried dill weed
1/2 tsp salt
1/2 ground black pepper

Mix all the ingredients together.  Serve with tortilla chips.

I love cucumber salsa!!!!  I think I could founder on it!!!
